【在台灣重現經典歐式麵包

在台灣,麵包對大多數人來說,可能只是快速方便的點心,但對格蘭山麥來說,麵包可以是另一種更健康的飲食選擇。

 

2017年,因在台灣遍尋不著正統的歐式麵包,我們姊妹共同創立了格蘭山麥,從小小的市集開始,將這個歐美常見的飲食文化推動給更多台灣人認識。

Steffi Liao and her sisters Emily and Lina began Albion Wheat as a way of offering bread alternatives to Taiwan. Healthy breads made with whole wheat and sourdough are common in Europe and in San Francisco, USA, but they are difficult to find in Taiwan, even in western-style bakeries.

◍ 連麵粉都新鮮現磨的堅持

為了保留有機小麥完整的維生素及營養,我們不使用一般市售白麵粉,堅持於每次烘焙前自己新鮮現磨麵粉、以自養酵母發酵,不添加多餘的糖分與食品添加劑,每道工法皆親力親為,只為了做出真正道地的歐洲全麥麵包。

Albion Wheat's wholewheat sourdough bread uses only certified organic wheat sourced locally in Taiwan and from abroad to recreate a flavor and texture loved by Europeans for generations.

 

格蘭山麥使用台灣、澳洲及歐洲進口,且經過有機認證的小麥原粒,自己研磨成麵粉,再以自養的舊金山酸種酵母低溫發酵。

 

◍ 吃的健康,身體最知道

像這樣低油、低糖、高纖的全穀粒麵包在臺灣相當少見,以前吃高糖分、多添加物的麵包時,你可能會覺得身體負擔好重,快速升高的血醣說服大腦「吃飽了」,但實質上卻沒有獲得任何營養。

有別於一般白麵包,酸種全榖物麵包適合正在控制血醣、維持體態的人食用,格蘭山麥始終秉持高品質的烘焙堅持,因為我們始終相信,飲食是否健康,身體會自己告訴你答案。

Albion makes use of certified, hand-ground organic wheat either grown in Taiwan or imported from Australia and Europe, as well as naturally grown sourdough with no additives to offer the best, most natural breads in the market. Their sourdough starters are raised in a valley near Yangmingshan National Park, to ensure the lactobacilli enjoy pristine surroundings, clean air, and crisp, clear water -- everything a happy organism needs to thrive. 

 

↑在歐美,麵包是搭配餐點的主食,如同台灣的白米飯,但酸種麵包的升糖指數低,同時保留了小麥的高纖與豐富生素,對減重或有血醣困擾的人來說,是更好的一種主食選擇。
